A sieve is used to sift flour and icing sugar, strain sauces, stock and drinks, or press berries into a purée. This section offers Tescoma sieves from the PRESTO, GrandCHEF and DELICIA ranges: small 6–10 cm sieves for tea, spices and dusting desserts, medium 14–20 cm sieves for sauces and stock, and mechanical flour sifters.
Types of sieves
- Handled sieves: the all-round option; pick the diameter to suit the vessel — small for a cup, large for a pot.
- Mechanical sifters: sift flour and sugar at the squeeze of a handle, with no tapping, so there is less dust on the worktop.
- Straining baskets: sit inside a pot and lift out together with vegetables or pasta.
- Sifting scoop: combines a measuring scoop and a sieve, handy for dusting baked goods.
How to choose a sieve
Flour and icing sugar need a fine mesh; sauces and stock need a medium one. All-stainless models, with both frame and mesh made of steel, cope with hot liquids and are easy to clean. If you often work with small quantities, it helps to have two or three sieves of different sizes.
Sieve or colander?
A colander has large holes and is meant for draining pasta and rinsing vegetables. A fine-mesh sieve catches even the smallest particles, which makes it the choice for flour, thin sauces, berry purées and brewing.
